  • 2 tablespoons vegetable oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 4 tablespoons Massaman curry paste
  • 1 can (13.5 ounces) coconut milk
  • 1 cup chicken or vegetable broth
  • 2 medium potatoes, cubed
  • 1 large carrot, sliced
  • 1/2 cup roasted peanuts
  • 2 tablespoons fish sauce (or soy sauce for a vegetarian option)
  • 1 tablespoon tamarind paste
  • 1 tablespoon brown sugar
  • 1 cinnamon stick
  • 1 star anise
  • 1 bay leaf
  • Cooked jasmine rice, to serve

Instructions

  • Season the protein chunks with salt and pepper.
