  • Soften the onions and bell peppers in a big saucepan with a little extra olive oil. Use salt to season.
  • To create the sauce, combine the remaining ingredients. Smashed tomatoes, olives, raisins, honey, a bay leaf, and crushed pepper flakes can all be added to the same skillet. Add the white wine and vinegar and stir. To blend, stir. 10 minutes of medium-low simmering are required.
  • Add the eggplant and stir. Since the eggplant is already cooked, just combine it with the remaining ingredients and simmer for around 2 to 3 minutes. Garnish with fresh parsley and mint.

  • Milk, whole milk, 1-1/2 cups

The sauce will come together, thicken, and become smooth in about 2 to 3 minutes. Add salt at this point and whisk once more.

In the meantime, prepare the pasta by following the directions on the package in salted boiling water. The pasta is drained and rinsed.

Cheddar cheese can be added to the prepared sauce and heated through while constantly stirring.
